I love Gyros, the Greek sandwich in pita bread ( I know it has meat) But, the cucumber dipping sauce, that is the best part! You can use it for dipping. Crispy pita chips or fresh veggies from the garden. It’s also great for veggie sandwiches or roll ups. It’s really delish and oh so easy.
What You Need
1 Large cucumber (seeds removed)
1 Cup sour cream ( or Greek yogurt)
2 Tbsp. *Greek seasoning (from the market or make using the recipe below)
1 Tbsp. garlic powder
1 Tbsp. dill
*Greek seasoning (makes about 12 teaspoons) In a small bowl, combine all ingredients. Store in air tight container for up to 3 months.
1 1/2 tsp dried oregano
1 tsp dried mint
1 tsp dried thyme
1/2 tspdried basil
1/2 tspdried marjoram
1/2 tsp dried minced onion
1/4 tsp dried minced garlic
Grater ( or shredder)
Cheese Cloth ( or clean tea towel)
Lets Make It!
Using a grater (fine shred) shred cucumber and squeeze out all of the liquid using a cheese cloth or towel. In a bowl combine cucumber, sour cream, Greek seasoning, garlic and dill and stir well with a fork. Cover and let chill in the refrigerator for 30 minutes or longer,(overnight is best). That’s it!
